We took our guests to South Padre Island, even though the weather was still rather dreary, cool, and rainy. Our first stop was Pelican Station, a cute restaurant with a great view of the bridge.
After a yummy seafood lunch, we cross the bridge over to the island. Our first (and obligatory) stop was the visitors’ center where we snapped a photo of the world’s largest permanent sand castle.
We made a stop at the sea turtle sanctuary on the island. Alas, most of their pools were covered due to the cool weather.
Back home, in keeping with the introduction of different Tex-Mex dishes for our guests, I made chile rellenos. Muy bueno!
