When our daughter Alexis was here, she loaded some podcasts and music on my phone, so now I can enjoy some entertainment on my walks. I tried it solo for the first time today, and was successful!
I joined the pickleball group and played for about 1.5 hours. Some of the players say that I am improving, but my serves are awful.
This Facebook memory popped up from 5 years ago when we traveled to New Zealand. I met this chap in a museum. Fun! After visiting friends on the north island, we rented a small camper and toured the south island. From there, we went to Australia where we did housesitting assignments for 6 months all over the continent.
I spent the afternoon preparing for a nice dinner with another couple here in Retama Village. Our back-door neighbors from Ontario could not come this year. (We miss them a lot). They were storing some of their furniture in the rental coach house, planning to be here this winter. The house sold and they asked if we could store some of their things. We put their dining room table in our main room. Today, I set up the table for our dinner party. It looks quite nice!
DINNER: We started with cocktails outside around the firepit, since it was a bit chilly. Then, salads with lettuce, tomato, cucumber, parsley, and slivered almonds (instead of croutons). The main course was huge scallops that I sauteed briefly in butter. I served them with a pepperonata sauce, a Nick Stollino recipe. I made it by blending cooked green, red, orange, and red bell peppers along with onions, parsley and oil. Side was a casserole to use up some tomatoes, poblano peppers, acorn squash, green onions, and red onions. After sauteing all that, I dabbed on some good mozzarella, sprinkled with parmesan cheese, and baked. It was quite tasty….and easy.
