Day #174 – Covid testing – again!

LOCATION:  Plymouth, New Hampshire

WEATHER:  Very nice.  Mostly sunny.  High 76

Yesterday, we didn’t see much around here as it was raining, so this morning I took advantage of the nice weather and took a walk around here.  We have the place almost to ourselves. 

There is a nice river that runs through the campground that is popular for swimming and tubing.

We headed off to the town of Plymouth to get our Covid 19 test.  It was a drive-through procedure at a CVS pharmacy.  I cannot make myself put that swab way back in my nostril, so good thing that George is a nurse!  We hope we get the results tomorrow. 

Plymouth is a really nice town.  We went to its library to do some internet work, then walked around.  It is a college town with its downtown around the town square.

On our way back to the campground, we passed through this covered bridge built in 1856.

And, we stopped at a wonderful produce/flower stand.  We wanted to buy even more veg, but are trying not to have too much on hand, in case it gets confiscated at the border.

DINNER:  Asian meatballs in ramen.  I made the meatballs with ground pork, panko, fish sauce, honey, whisked egg, scallions, ginger, chopped cilantro, and garlic.  For the sauce, I stirred up soy sauce, Asian  salad dressing, match-stick sized cucumbers and carrots, scallions, and sesame seeds.  To serve, mix the sauce into the ramen and serve with the meatballs (which George cooked in an iron skillet over the fire).  Sprinkle with more cilantro.  Sides were grilled summer squash and a salad (gotta use that veg!)
